What you’ll need:
• 2 cups all-purpose flour
• 3/4 teaspoon baking soda
• 1/2 teaspoon salt
• 4 medium bananas
• 1 teaspoon vanilla extract
• 1 stick softened butter
• 1/2 cup sugar
• 1/2 cup brown sugar
• 2 large eggs
• Whisk
• Hand mixer — best of our test!
• Parchment paper
• Loaf pan
Step 1: Combine Dry Ingredients
Whisk it real good: Mix all-purpose flour, baking soda, and salt in a large mixing bowl.
Step 2: Mash Bananas
In a separate bowl, break up 4 medium bananas. Mash them with a fork or a potato masher if you’re feeling fancy. Add vanilla extract and stir.
GH TIP: Look for ripe bananas with brown speckles all over them.
Step 3: Mix
With a hand mixer, mix together softened butter, sugar, and brown sugar until a clumpy, sticky paste forms.
Add the eggs to the butter mixture one at a time. Continue using the hand mixer but reduce to low speed. Once combined, alternate adding the banana and flour mixture.
GH TIP: Spice up your loaf with 1 cup of chopped nuts or chocolate chips.
Step 5: Bake Bread
Spoon the banana bread mixture into a loaf pan. Line the pan with parchment paper to make for easier removal. Bake bread for 1 hour at 325°F until the outer layer is nice and golden.
Step 6: Slice and Enjoy
Let cool for 10 minutes before serving. Then spread some butter on your slice and enjoy!
