How to make Rainbow Snow Cones without any artificial dyes

 The hottest days of summer are upon us, so here’s a treat to cool you down.

Rainbow Snow Cones

2 cups water
2 cups granulated sugar
2 cups chopped fresh pineapple
2 cups sliced fresh strawberries
2 cups fresh blueberries
8 cups ice (preferably made with carbonated water)

1. To make the simple syrup, stir together water and sugar in a small saucepan; cook over medium-high heat, stirring often, until sugar is completely dissolved, about 3 minutes. Set aside, and cool completely.

2. Place pineapple and one-third of simple syrup in a high-powered blender, process until smooth. Pour mixture through a fine wire-mesh strainer into a bowl, and discard solids. Rinse blender and strainer, and repeat process with strawberries and then blueberries.

3. Divide ice evenly between 2 double-lined ziplock bags. Pound ice with mallet or rolling pin to break up into smaller pieces. Place crushed ice in blender, and pulse until very finely crushed and is the consistency of packed snow, about 30 times. To serve, scoop ice into bowls or paper cups, and drizzle with the pineapple syrup, strawberry syrup and blueberry syrup.
