This Sweet Potato Salad With Yogurt Dill Dressing is a perfect replacement for old school potato salad, and there is a ton of room for new ingredients , next batch I will be testing with some pickles !
2 sweet potatoes peeled and cut into bite size pieces
1 crisp apple chopped into small pieces
1 small red onion chopped into small pieces
2 garlic cloves finely chopped
1/2 cup greek yogurt
1 tbs dill
1/2 tsp rock salt
1-2 tsp of hot source (optional)
Boil sweet potatoes until tender but not mushy drain and put in a bowl. Add apple, onion, yogurt, dill , garlic and salt and mix gently but well .Place in fridge for 1 hour and serve.
